Cast Iron, Chili Salmon
Did someone say Chili Salmon? Yes, we did. Most of us prefer our salmon, sweet and honey glazed, you know the usual. In this house we love anything with a little spice and we are totally obsessed with Chili sauce, so why not give this experiment a try, right? Well I did and let me just say it was the best idea ever, its not only super easy to prepare but it taste delicious! If you like chili sauce or anything spicy, you'll love this recipe. We paired it with some Parmesan Risotto.

Ingredients
3 Salmon Fillets (skin on)
6 oz Broccolini
1 Tbsp. olive oil
2 Tsp. minced garlic
2 Tbsp. of butter
1-2 Tbsp. of chili garlic sauce
Juice of 1/2 lemon
1 Tbsp. of cilantro
Crushed Red Pepper- optional
Instructions
Step 1:
Rinse the fillets and place on paper towels until dry. Season with salt and pepper. Set aside.
Step 2:
Rinse and trim the broccolini then boil for about 2-3 minutes or until desired tenderness. Set aside.
Step 3:
Heat olive oil in a cast iron skillet over medium heat. Cook salmons on both sides until golden brown. About 8-10 minutes or until desired temperature. Remove salmons from pan and set aside.
Step 4:
In the same skillet over medium heat, add one tablespoon of butter and cook garlic for a few seconds, add the broccolini to the skillet and season with salt and pepper- cook for 1 minute. Remove from skillet and set aside.
Step 5:
In the same skillet add the remainder of the butter, lemon juice, chili garlic sauce and cilantro. Stir to combine. Add salmon back to the pan and coat with sauce until desired crispiness and consistency.
Tips
Cook fillets skin side down, first. Avoid flipping fillets until skin is nice and crispy.
Add extra butter or olive oil if sauce dries out too quickly, lower heat.
Garnish with crushed red peppers, cilantro and lemon slice *optional
